Banana Nut Protein Muffins
Since I'm back on the WW wagon, I've looking for something sweet to have in the morning. These are so good and they are only 2 pts each!
Banana Nut Muffins
Makes 12
2 cups Kodiak Buttermilk Protein Cake mix
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 cup unsweetened vanilla almond milk
1 egg
2 Tbs. Splenda brown sugar blend
1 tsp. vanilla
2 ripe bananas, mashed
6 walnut halves, broken into pieces
1. Preheat oven to 350F. Line a 12-cup muffin pan with foil cupcake liners.
2. Combine Protein mix through bananas in a medium bowl. Beat with a mixer on low until combined. Spoon mixture evenly into prepared muffin cups. Sprinkle walnuts evenly over batter in cups.
3. Bake muffins until a toothpick inserted in centers come out clean, about 18 minutes, turning halfway through baking. Let cool completely.
