Peanut Chicken
I found a version of this on Pinterest, but wanted to make some changes to make it my own. This Thai-inspired recipe is so amazing, my husband even says it tastes better than takeout. You can serve this over linguine, but I like to serve it over steamed white rice.
Peanut Chicken
Serves 4
Ingredients
1 cup chicken broth
2/3 cup peanut butter
1/3 cup soy sauce
2 cloves garlic, minced
1 teaspoon sugar
1 1/2 lbs chicken, cut into 1-inch pieces
1 large red bell pepper, cut into strips
1 package (10 ounces) mushrooms, sliced
3 cups packed fresh spinach
Juice from half fresh lime
Chopped peanuts for garnish
Directions
Combine chicken broth, peanut butter, soy sauce, garlic and sugar in a medium mixing bowl. Whisk to combine. Add broth mixture and chicken to slow cooker. Cook on high for 2 hours and 30 minutes.
At the 2 hour mark, open the slow cooker and add the bell pepper, mushrooms, spinach and lime juice. Replace lid and continue cooking.
Sprinkle chopped peanuts over each serving.
